Not Your Bakery started with one idea: an edible should taste as good as it is made. Twenty years of cannabis culinary work between the owners goes into every batch of Jelly, and every batch still gets cooked, cut and packed by our own team.

How Jelly gets made

Four things worth knowing about what's in the bag, and who made it.

We were confectioners first

Not Your Bakery didn't start with cannabis. It started with confectionery. We were already making things people reached for because they enjoyed them.

We're not a bakery. We're confectioners, and we hold ourselves to confectionery standards rather than cannabis ones. Craft first, cannabinoid second. Still in that order.

Twenty years, two kitchens

Between the owners, twenty years of cannabis culinary work.

Two facilities, Austin and Oklahoma City, where every batch is cooked, cut and packed by our own team.

The hard part was the taste

Anyone can put hemp in a gummy. The difficulty is taking the taste of it out without losing the confection: the texture, the finish, the reason you reached for it in the first place.

That's the problem we set out to solve. We think we nailed it.

Immersion, and then proof

Immersion is the unglamorous part: working the active evenly through the whole batch so every piece carries the same dose. It takes longer than it has to.

It's also the difference between a bag you can trust and a bag with surprises in it. No surprise double dosing.
